Durian Hokkaido Cupcake 榴槤烫面北海道蛋糕
材料A:
90克 牛奶
30克 粟米油
20克 细沙糖
材料B:
90克 底筋面粉
材料C:
5粒蛋黄
材料D:
5粒蛋白
40克细砂糖
1/4茶匙塔塔粉
材料E:
150克 植物性鲜奶油 Topping Cream 打发
150克 榴槤搅烂加入打发的Topping Cream 拌均。
做法:
1. 将材料A 倒入小锅,小火慢加热,不用煮滚,区区几秒就热了,然后加入蛋黄拌均,在筛入面粉拌均,成蛋黄糊,备用。
2. 将蛋白打起粗泡后,加入塔塔粉和细沙糖(糖分三次加入)打至硬性发泡。
3. 取出1/3的蛋白霜,加入蛋黄糊,以上下拌均。
4. 再倒入剩下的蛋白霜里,在继续以上下拌均。
5. 倒入杯子 9 分满,轻敲几下震出气泡。
6. 预热烤箱, 100度10min 120度 20 min 140度 15min 150度 10min
7. 出烤箱后,立刻在轻敲两下,这样就不会回缩了。
8. 待凉后,放进冰箱半个小时,打发好的榴莲鲜奶油装入剂花袋,插入蛋糕中间,鲜奶油剂入蛋糕里,当表面感觉膨胀时,就可以取出。后就剂花做装饰。

    I should really make some with durian! But we always finished the durians we buy, next time, must reserve some first before everyone starts eating the durians! Thanks for baking along with us!
